Easter treats

1. Easter cupcakes

For the batter you will need:
– Cupcake/muffin mix
– Butter
– Water
(or the ingredients needed for your mix)
– Cupcake cases

You can also make your own from scratch.

For the icing:
– 250g cream cheese (chilled)
– 300g icing sugar
– 50g butter
– Piping bag + nozzle

– White chocolate
Writing icing
Black sprinkles
– Mini chocolate eggs


First, preheat the oven to 200°C and mix the muffin mix and the needed ingredients. I used melted butter and water for my mix. Fill the cupcake casings 3/4 and put them in the oven for about 12-13 minutes all depending on your mix and oven. Take them out and let them cool.

Whilst the cupcakes are cooling down, melt white chocolate in the microwave and put it in a piping bag or just a normal plastic bag and cut a tiny hole in the corner. Get a tray and baking paper and start shaping tiny figures on the paper. I went for chickens, rabbits and easter egg shapes.


Put them in the fridge until solid. Apply the writing icing. For a chicken add yellow writing icing to the chocolate shape.


Add a dot of white and place a piece of black sprinkle to make an eye, and add red writing icing for the beak


Do the same for any other designs.

Put them back in the fridge and start with the cream cheese icing. Mix the icing sugar and butter together. Add the cream cheese and whisk until smooth.


Add the icing to the piping bag or a normal plastic bag with a nozzle in one corner. Start piping onto the cupcakes starting on the outer part and swirl into the middle. For alternative designs start in the middle and work your way out.


Start placing your white chocolate figures on the cupcakes along with some mini eggs and display on a plate.


2. Puffed rice nests

This recipe was originally for 25 nests, but I chose to half the recipe. If you want about 25 nests, double this recipe.

You will need:

  • About 50g puffed rice
  • 125g coconut butter
  • 100g chocolate
  • 1 egg
  • 1 dl sugar
  • 1 1/2 tbs black coffee
  • Mini eggs for decoration
  • Cupcake cases


First, melt the chocolate and the coconut butter together using a bain-marie.

Let it cool and whisk the egg and sugar until its white and fluffy


Mix the coffee, chocolate/coconut butter mix into the mixture. Mix well, add the puffed rice and mix together. IMG_2987

With a spoon, put the mix in the cupcake casings, leaving a little space in the middle so it resembles a nest. Put in the fridge to cool.


Add the mini eggs and arrange the nests on a plate.


Now you have two recipes for fun and delicious easter treats!
